Ingredients

  • 4 large eggs
  • 6 oz pork belly
  • ¼ cup soy sauce
  • 2 cloves, minced garlic

Instructions

    Boil eggs in salted water for 7 minutes, then transfer to ice water to stop cooking.

    While eggs cool, slice pork belly into 0.25-inch strips and lay in a cold skillet.

    Cook pork over medium heat, stirring occasionally, until crispy and rendered, about 8 minutes.

    Pour off all but 1 tbsp fat from the skillet. Add minced garlic and cook for 30 seconds until fragrant.

    Add soy sauce and 1 tbsp sugar to the pan, stirring to combine. Peel and halve eggs, then nestle into sauce.

    Warm eggs in the sauce for 1 minute. Plate eggs and pork belly, drizzle sauce over top.
