Crispy Bacon & Cheddar Skillet Frittata

Ingredients
- 4 strips bacon strips
- 6 large eggs
- ¾ cup sharp cheddar cheese, shredded
- ¼ medium yellow onion, diced
- 2 tbsp fresh chives, chopped
- 1 tbsp butter

Cook bacon in a 10-inch cast iron skillet over medium heat until crispy, about 6 minutes. Transfer to a plate and chop once cool.

Drain all but 1 tbsp bacon fat from the skillet. Add diced onion and cook until soft, about 2 minutes.

Whisk eggs with salt and pepper in a bowl. Pour into the skillet, scatter bacon and cheddar over top, don't stir.

Cook over medium until edges begin to set, about 3 minutes. You'll see the top still jiggle slightly.

Transfer skillet to the broiler preheated to high. Broil 2–3 minutes until the top puffs and turns golden.

Slide onto a cutting board, scatter chives over top, slice in half, and serve immediately.
