Ingredients

  • 1.2 lb pork belly, skin-on
  • 3 tbsp soy sauce
  • ½ medium apple (grated or finely chopped)
  • ½ lb bok choy, halved lengthwise
  • 4 pieces fried buns (store-bought)
  • 1 tbsp ginger (fresh, minced)
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

    Pat pork belly dry with paper towels. Score the skin in a crosshatch pattern, then season with salt and pepper on both sides.

    Heat a large skillet over medium-high until very hot, ~2 minutes. Place pork skin-side down and sear without moving for 8 minutes until skin crisps.

    Flip pork and reduce heat to medium. Add soy sauce, grated apple, ginger, and rice vinegar around the pork. Simmer 6 minutes, spooning glaze over the meat.

    Push pork to the side and add bok choy to the pan. Cook 3 minutes, tossing until wilted and coated in glaze.

    Warm fried buns in a dry skillet or toaster oven while the pork finishes, ~2 minutes until just hot.

    Slice pork belly against the grain. Drizzle sesame oil over bok choy and plate with buns alongside. Spoon any pan glaze over the top.
