Ingredients
- 1.2 lb pork belly, skin-on
- 3 tbsp soy sauce
- ½ medium apple (grated or finely chopped)
- ½ lb bok choy, halved lengthwise
- 4 pieces fried buns (store-bought)
- 1 tbsp ginger (fresh, minced)
- 2 tbsp rice vinegar
- 1 tsp sesame oil

Pat pork belly dry with paper towels. Score the skin in a crosshatch pattern, then season with salt and pepper on both sides.

Heat a large skillet over medium-high until very hot, ~2 minutes. Place pork skin-side down and sear without moving for 8 minutes until skin crisps.
