Ingredients

  • 1.5 lb pork ribs (baby back or spare), cut into 2-rib pieces
  • 4 tbsp ketchup
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • ½ cup sambal oelek
  • 1 whole lime

Instructions

    Pat ribs dry and season generously with salt and black pepper on both sides.

    Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Working in batches, sear ribs 2 minutes per side without moving until edges brown, then transfer to a plate.

    Whisk ketchup, soy sauce, and brown sugar in a small bowl until smooth and combined.

    Return all ribs to the skillet, pour glaze over, and toss to coat evenly for 2 minutes over medium heat.
