Ingredients

  • 8 whole fresh sardines, cleaned
  • 4 cloves garlic cloves, thinly sliced
  • 1 teaspoon chili flakes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

    Preheat the oven to 400°F (200°C). Pat the 8 sardines dry with paper towels and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

    Arrange the sardines in a single layer in a baking dish. Scatter the 4 sliced garlic cloves and 1 tsp chili flakes evenly over the fish.

    Drizzle the 3 tbsp olive oil over the sardines, turning them gently to coat. Let them sit for 5 minutes while the oven finishes heating.

    Bake for 12-15 minutes, until the sardines are opaque and flake easily with a fork, and the garlic is lightly golden at the edges.

    Remove from the oven and sprinkle with the 2 tbsp chopped parsley. Serve hot, spooning the garlic-chili oil from the dish over each portion.
