Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 2 tbsp honey or palm sugar
  • ½ whole lime, juiced
  • 2 clove garlic, minced
  • 2 lbs pork ribs, rack-cut
  • 1 whole cucumber, thinly sliced
  • 2 cups cooked white rice

Instructions

  1. 1

Line a sheet pan with foil. Pat ribs dry and arrange in a single layer.

  2. 2

Whisk soy sauce, ginger, honey, lime juice, and garlic in a small bowl until sugar dissolves.

  3. 3

Brush glaze generously on both sides of the ribs, reserving 2 tbsp for finishing.

  4. 4

Broil on the middle rack for 8–10 minutes until edges char and glaze caramelizes, turning halfway.

  5. 5

Remove from oven, brush with reserved glaze, and rest 2 minutes while you arrange rice and cucumber on plates.

  6. 6

Slice ribs between the bones and serve over rice with cucumber slaw on the side.
