Ingredients
- 1.25 lb pork short ribs (bone-in, 1.5-2 inches thick)
- ¾ lb baby potatoes (or fingerling)
- 3 tbsp soy sauce
- 1 tbsp ginger (minced)
- 1 tbsp brown sugar
- 3 cloves garlic (minced)
- ¾ cup water

Pat ribs dry with paper towels. Season generously with salt and pepper on all sides.

Heat oil in a large skillet over medium-high until shimmering. Sear ribs 2 minutes per side without moving — surfaces should look caramelized.

Remove ribs to a plate. Add potatoes to the skillet and sear 2 minutes total, stirring once. Return ribs to pan.

Stir in soy sauce, ginger, garlic, brown sugar, and water. Bring to a simmer, then lower heat to medium and cover.

Simmer covered for 12 minutes, stirring once halfway through. Ribs should be fork-tender and glaze should coat the pan.

Serve ribs and potatoes hot, spooning glaze over top. Garnish with sliced green onion if you have it.
