Ingredients

  • 1 lb (about 6 thighs) boneless, skinless chicken thighs
  • ½ cup all-purpose flour
  • ¼ cup soy sauce
  • 6 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1 cup (uncooked) white rice
  • 2 cups neutral oil for frying

Instructions

  1. 1

Bring 2 cups salted water to a boil, add rice, cover, reduce heat to low, and cook 15 minutes until water is absorbed.

  2. 2

Pat chicken thighs dry, season generously with salt and pepper, then coat evenly in flour.

  3. 3

Heat oil in a large skillet over medium-high until a pinch of flour sizzles on contact, about 2 minutes.

  4. 4

Add chicken skin-side down and fry 6–7 minutes per side without moving until deep golden brown and cooked through.

  5. 5

Transfer chicken to paper towels, leave 1 tbsp oil in skillet, add garlic and cook until fragrant, ~30 sec.

  6. 6

Add soy sauce and brown sugar, stir until sugar dissolves, return chicken to skillet, toss to coat, and cook 1 minute until glossy.

  7. 7

Divide rice between bowls, top with soy garlic chicken, spoon glaze over, and serve immediately.
