Ingredients
- ¾ lb beef sirloin or flank steak, thinly sliced
- 6 oz lo mein noodles or spaghetti
- 3 tbsp soy sauce
- 1 tbsp ginger, minced
- 3 whole scallions, sliced into 1-inch pieces
- 1 tbsp sesame oil
- ½ tsp sugar

Boil lo mein noodles in salted water until al dente, about 6 minutes. Drain and set aside.

Heat 2 tbsp neutral oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add beef in a single layer. Cook without stirring for 90 seconds, then flip and cook until edges brown, 90 more seconds.

Push beef to the side. Add minced ginger and cook until fragrant, about 30 seconds.

Pour soy sauce, sugar, and sesame oil into the skillet. Toss in the cooked noodles and scallions, stir until everything is coated and hot, about 60 seconds.
