Ingredients

  • 1 lb ground beef
  • 8 oz short pasta (elbow or penne)
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes (canned)
  • 6 slices American cheese slices
  • 1 to taste salt and black pepper

Instructions

    Heat a 12-inch skillet over medium-high heat. Cook ground beef, breaking it up with a spoon, until browned, ~5 minutes.

    Drain excess fat if needed. Add pasta, beef broth, and diced tomatoes with juice. Stir to combine.

    Bring to a boil, then reduce heat to medium. Simmer uncovered, stirring occasionally, until pasta is tender, ~10 minutes.

    Lay cheese slices over the top. Remove from heat and cover for 1 minute until melted.
