Ingredients
- ¾ lb beef flank steak or sirloin
- 6 oz chow mein noodles (fresh or crispy)
- 1 medium bell pepper (red or yellow)
- 3 tbsp soy sauce
- 1 tbsp ginger, minced
- 2 cloves garlic, minced

Pat beef dry and slice thinly against the grain, about 1/4 inch thick.

Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers.

Add beef in a single layer and sear without stirring for 2 minutes until browned, then flip and cook 90 seconds more. Transfer to a plate.

Add 1 tbsp oil to the same skillet, then stir-fry diced bell pepper for 2 minutes until slightly softened.

Add ginger and garlic, cook 30 seconds until fragrant, then add noodles and soy sauce. Toss constantly for 2 minutes.
