Ingredients
- 8 oz Lo mein noodles (or spaghetti)
- ¾ lb Beef sirloin or flank, thinly sliced
- 3 tbsp Soy sauce
- 2 cloves Garlic, minced
- 1 tbsp Ginger, minced
- 2 stalks Green onion, sliced (optional garnish)

Boil salted water in a large skillet. Add noodles, cook until al dente, drain, and set aside.

Return skillet to high heat with 1 tbsp oil. Once smoking, add beef in a single layer.

Let beef sear 60 seconds without stirring until the underside browns, then stir and cook until no pink remains, ~3 minutes total.

Add garlic and ginger, stir until fragrant, about 30 seconds.

Return noodles to skillet with soy sauce and 2 tbsp water. Toss constantly until noodles are heated through and glossy, ~2 minutes.
