Ingredients
- 8 oz lo mein noodles (fresh or frozen)
- 8 oz beef (flank or skirt steak), thinly sliced
- 6 oz firm tofu, pressed and cubed
- 4 oz cooked sweet and sour pork (from takeout or leftover)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp scallion (chopped) and sesame seeds for garnish

Boil lo mein noodles in salted water until al dente, about 4 minutes. Drain and set aside.

Heat 2 tbsp neutral oil in a large skillet over medium-high heat until it shimmers, 90 seconds.

Add tofu cubes; sear without stirring for 3 minutes until golden, then toss and cook 2 minutes more until crispy.

Push tofu to the side. Add sliced beef; cook without stirring 90 seconds, then stir-fry 2 minutes until edges brown.

Add drained noodles, sweet and sour pork, soy sauce, and sesame oil. Toss everything together until heated through, 2 minutes.

Plate and scatter scallion and sesame seeds on top. Serve immediately.
