Ingredients
- 1 cup dosa mix
- 1.5 cups water
- 2 cups mixed vegetables (bell pepper, onion, tomato, mushrooms)
- 3 tbsp oil
- 1 tsp mustard seeds
- 8 leaves curry leaves

In a bowl, whisk 1 cup dosa mix with 1.5 cups water until smooth and lump-free. Let the batter rest while you prepare the filling, about 5 minutes.

Heat 2 tbsp oil in a skillet over medium. Add 1 tsp mustard seeds and 8 curry leaves; cook until seeds splutter, about 30 seconds.

Add 2 cups chopped mixed vegetables (bell pepper, onion, tomato, mushrooms) and a pinch of salt. Sauté until tender and lightly browned, about 8 minutes. Set aside.

Heat a non-stick pan over medium-high. Pour a ladleful of batter (about 1/4 cup) and spread into a thin circle. Drizzle 1 tsp oil around the edges. Cook until golden and crisp, about 2 minutes per side.
