South African Biltong Salad

Ingredients

  • 4 cups Mixed salad greens (arugula, spinach, or lettuce)
  • 150 g Biltong, sliced thin (or store-bought sliced)
  • ½ medium Red onion, thinly sliced
  • 3 tbsp Red wine vinegar
  • 2 tbsp Olive oil
  • 0 Salt and black pepper to taste

Instructions

    Place red onion slices in a small bowl. Pour 1 tbsp vinegar over them and let sit 5 minutes to soften.

    In a large bowl, whisk together remaining 2 tbsp vinegar and olive oil until emulsified.

    Add salad greens to the dressing and toss gently until coated.

    Divide greens between two plates. Top with biltong slices and pickled red onion.

    Season with salt and black pepper. Serve immediately.
