Biltong Salad with Lemon Dressing

Ingredients

  • 4 oz biltong, sliced or torn into strips
  • 5 cups mixed salad greens (arugula, spinach, lettuce)
  • 1 medium cucumber, sliced into rounds
  • ¼ cup red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 whole lemon, juiced
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Slice cucumber into thin rounds. Thinly slice red onion. Halve cherry tomatoes.

    Whisk lemon juice, olive oil, salt, and pepper in a small bowl until combined.

    Toss greens with cucumber, onion, and tomatoes in a large bowl.

    Drizzle dressing over salad and toss gently until coated.

    Top with biltong strips. Serve immediately.
