Ingredients
- 4 oz biltong, sliced or torn into strips
- 5 cups mixed salad greens (arugula, spinach, lettuce)
- 1 medium cucumber, sliced into rounds
- ¼ cup red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 whole lemon, juiced
- 3 tbsp olive oil
- 1 pinch salt and black pepper to taste

Slice cucumber into thin rounds. Thinly slice red onion. Halve cherry tomatoes.

Whisk lemon juice, olive oil, salt, and pepper in a small bowl until combined.

Toss greens with cucumber, onion, and tomatoes in a large bowl.
