Ingredients
- 6 oz biltong, sliced thin
- 4 cups mixed salad greens (arugula, spinach, lettuce)
- ½ medium cucumber, sliced into thin rounds
- ¼ medium red onion, sliced thin
- 1 whole lemon (juiced)
- 3 tbsp olive oil
- 1 tsp coriander seeds (or ground coriander), toasted and lightly crushed
- 1 pinch salt and black pepper to taste

Toast coriander seeds in a dry skillet over medium heat, shaking often, until fragrant, ~90 seconds.

Crush toasted seeds lightly with the back of a spoon. Whisk lemon juice, olive oil, crushed coriander, salt, and pepper in a bowl.

Toss mixed greens, cucumber, and red onion together in a large bowl.

Pour dressing over greens and toss gently until coated.

Divide salad between plates. Layer biltong slices on top and serve immediately.
