Ingredients

  • 2 cups all-purpose flour
  • ¾ cup warm water
  • 1 packet (2.25 tsp) instant yeast
  • 1 tbsp sugar
  • ½ tsp salt
  • 2 tbsp baking soda
  • 1 tbsp coarse salt
  • 1 cup sharp cheddar, shredded
  • 3 oz cream cheese
  • ¼ cup beer (lager or ale)

Instructions

    Mix flour, yeast, sugar, and salt in a large bowl. Add warm water and stir until a shaggy dough forms.

    Knead dough on a floured surface for 8 minutes until smooth and elastic.

    Cover with a damp towel and let rise in a warm spot for 20 minutes until puffy.

    Divide dough into 16 equal pieces. Roll each into a ball and flatten slightly.

    Bring a large pot of water to a boil. Stir in baking soda until dissolved.

    Drop dough bites into boiling water, 4 at a time. Remove with a slotted spoon when they float and cook 30 seconds longer.

    Place boiled bites on a parchment-lined baking sheet. Sprinkle with coarse salt immediately.

    Bake at 425°F for 10–12 minutes until golden brown and crispy on top.
