Ingredients

  • 2.25 cups all-purpose flour
  • 1 tsp instant yeast
  • ¾ cup warm water
  • 1 tbsp baking soda
  • 3 tbsp butter, melted
  • 1 tbsp coarse salt
  • 1.5 sharp cheddar cheese, shredded
  • ½ cup milk

Instructions

    Mix flour, yeast, and 0.5 tsp salt in a large bowl.

    Add warm water and stir until a shaggy dough forms. Knead 5 minutes until smooth.

    Let dough rest at room temperature 20 minutes until puffy.

    Preheat oven to 400°F. Line a baking sheet with parchment paper.

    Pinch off dough into 20 walnut-sized pieces. Arrange on the baking sheet.

    Bring 2 cups water and baking soda to a boil in a small pot.

    Working in batches, drop 5 dough balls into baking soda water for 30 seconds each.

    Return boiled bites to the baking sheet. Brush with melted butter.

    Sprinkle coarse salt over top. Bake 12 minutes until golden brown.

    Heat milk and 1 tbsp butter in a small saucepan over medium until steaming.

    Add cheddar cheese and whisk until smooth. Season with salt and pepper to taste.

    Serve pretzel bites warm with warm cheese sauce for dipping.
