Ingredients
- 1.25 lb smoked beef cheeks (or beef chuck brisket, pre-cooked)
- 12 oz frozen french fries
- 1 medium yellow onion, sliced thin
- 3 tbsp crispy chili oil or hot honey
- 2 cups fresh lettuce (romaine or iceberg), torn
- 1.5 tbsp sherry vinegar or apple cider vinegar
- 1 tsp smoked paprika
- ½ cup beef stock or broth (warm)
Instructions
- 1
Bake fries according to package directions. Aim for crispy edges—they should sizzle when removed from oven.
- 2
While fries cook, heat 1 tbsp oil in a large skillet over medium-high. Add sliced onions and cook, stirring occasionally, until golden and soft, ~8 minutes.
- 3
Push onions to the side. Slice beef cheeks into bite-sized pieces. Add to the skillet with warm stock and smoked paprika.
- 4
Simmer beef with onions and stock for 4 minutes to warm through and deepen flavor. Meat should look glossy.
- 5
Toss torn lettuce with vinegar and a pinch of salt in a separate bowl until lightly dressed.
- 6
Plate fries, top with smoked beef and onions, drizzle remaining chili oil, and serve lettuce slaw alongside.
Tools you’ll need
