Ingredients

  • 1.25 lb smoked beef cheeks (or beef chuck brisket, pre-cooked)
  • 12 oz frozen french fries
  • 1 medium yellow onion, sliced thin
  • 3 tbsp crispy chili oil or hot honey
  • 2 cups fresh lettuce (romaine or iceberg), torn
  • 1.5 tbsp sherry vinegar or apple cider vinegar
  • 1 tsp smoked paprika
  • ½ cup beef stock or broth (warm)

Instructions

    Bake fries according to package directions. Aim for crispy edges—they should sizzle when removed from oven.

    While fries cook, heat 1 tbsp oil in a large skillet over medium-high. Add sliced onions and cook, stirring occasionally, until golden and soft, ~8 minutes.

    Push onions to the side. Slice beef cheeks into bite-sized pieces. Add to the skillet with warm stock and smoked paprika.

    Simmer beef with onions and stock for 4 minutes to warm through and deepen flavor. Meat should look glossy.
