Ingredients

  • 2 steaks (6-8 oz each) beef steaks (ribeye or ny strip, 1 inch thick)
  • 3 tbsp butter
  • ¼ cup grated parmesan cheese
  • 4 cloves garlic cloves, minced
  • 1.5 cups cherry tomatoes
  • 6 cloves roasted garlic cloves
  • 1 tbsp fresh thyme or parsley (chopped)

    Pat steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Heat olive oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear steaks 90 seconds per side without moving. They should look golden-brown with a crust.

    Reduce heat to medium. Add butter, minced garlic, roasted garlic, and cherry tomatoes to the pan.

    Tilt the pan and spoon the foaming butter over the steaks for 3 minutes until garlic is fragrant.

    Transfer steaks and tomatoes to plates, sprinkle parmesan and fresh herbs, then drizzle with pan butter.
