Ingredients

  • 2 steaks (10–12 oz each) beef ribeye or NY strip steaks (1.25 inches thick)
  • 3 tbsp butter

  • ¼ cup Parmesan, finely grated
  • 2 sprigs fresh thyme sprigs (or 0.5 tsp dried)
  • 2 peppers green bell peppers, halved & seeded

Instructions

  1. 1

Pat steaks dry with paper towels. Season both sides generously with salt and black pepper.

  3. 3

  4. 4

Sear steaks 90 seconds per side without moving. Transfer to a cutting board, tent loosely with foil.

  5. 5

Return skillet to medium heat. Add butter, garlic, and thyme. Tilt and spoon foaming butter over rested steaks 30 seconds.
