Ingredients
- ¾ lb beef sirloin, thinly sliced (about 1/4-inch)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 medium yellow onion, sliced thin
- ¾ cup kimchi, roughly chopped
- 2 whole eggs

Cook rice or reheat leftovers. Meanwhile, whisk soy sauce, sesame oil, and minced garlic in a small bowl.

Heat a large skillet over medium-high. Working in batches, sear beef slices 60-90 seconds per side without stirring—edges should brown. Transfer to a plate.

Add onion slices to the skillet. Stir and cook 3-4 minutes until edges caramelize and soften.

Return beef to the pan, pour in the soy-garlic sauce, and toss to coat. Cook 60 seconds, shaking the pan so sauce glazes evenly.

Crack eggs into the corner of the skillet, cover, and cook 2-3 minutes until whites set but yolks still jiggle.

Divide rice into bowls, top with glazed beef and onions, add kimchi, and slide one cooked egg onto each bowl. Serve immediately.
