Ingredients

  • 1 whole large egg
  • 1 whole bagel (plain or everything)
  • 2 tbsp cream cheese
  • 2 oz smoked salmon
  • 3 whole radishes
  • 2 tbsp, sliced green onions

Instructions

  1. 1

Bring a small pot of salted water to a boil over high heat, about 2 minutes.

  2. 2

Gently lower the egg into boiling water and set a timer for 6 minutes (soft yolk) or 7 minutes (medium yolk).

  3. 3

While the egg cooks, split the bagel and toast both halves until golden and crisp, about 2–3 minutes.

  4. 4

Spread 1 tbsp cream cheese on each toasted bagel half, then layer smoked salmon on top.

  5. 5

Thinly slice the radishes and scatter them over the salmon along with sliced green onions.

  6. 6

Remove the egg from water, cool under cold running water for 30 seconds, then peel and halve.

  7. 7

Arrange the bagel halves on a plate and nestle the egg halves alongside. Serve immediately.
