Ingredients

  • 2 slices bacon slices
  • 1 whole bagel, split
  • 1 whole large egg
  • 1 slice sharp cheddar or American cheese slice
  • 1 tbsp capers, drained
  • 2 tbsp red onion, thinly sliced

Instructions

    Cook bacon in a skillet over medium-high until edges curl and darken, ~4 minutes per side. Transfer to a plate.

    Toast bagel halves in the same skillet (or toaster) until golden and crispy on the cut sides, ~2 minutes.

    Crack egg into the skillet over medium heat. Cook until whites set but yolks still jiggle, ~3 minutes.

    Lay cheese slice on the fried egg while it's still in the pan — residual heat will melt it in 30 seconds.

    Stack bottom bagel half with bacon, then the cheesy egg. Top with capers and sliced red onions, then the other bagel half.

    Serve immediately with cucumber slices and a lemon wedge on the side.
