Ingredients

  • 1.5 whole avocado
  • 4 whole eggs
  • 4 slices bread
  • 4 oz smoked salmon
  • 1 whole tomato
  • ½ cup alfalfa sprouts
  • ½ whole lemon

Instructions

    Bring a pot of water to a boil. Add eggs and cook for 10 minutes until hard-boiled.

    Transfer eggs to ice water while they cool. Toast bread until golden and crispy, about 2 minutes per side.

    Halve the avocado and scoop flesh into a bowl. Smash with a fork until creamy but still chunky.

    Squeeze lemon over smashed avocado. Season with salt and black pepper, then stir.

    Spread mashed avocado on toasted bread. Peel and slice hard-boiled eggs into halves.

    Top each toast with salmon, egg halves, tomato slices, and sprouts. Serve immediately.
