Ingredients

  • 2 slices bread (sourdough or whole grain)
  • 1 whole avocado, ripe
  • 2 whole eggs
  • 3 oz smoked salmon
  • ½ whole lemon
  • 1 tbsp fresh dill
  • 1 tbsp white vinegar (for poaching)

Instructions

    Bring a shallow pot of water to a gentle simmer and add white vinegar.

    Toast the bread until golden and crisp on both sides.

    Halve the avocado, scoop into a small bowl, mash with a fork until creamy, and season with salt and pepper.

    Crack an egg into a small cup, gently slide into simmering water, and poach 3-4 minutes until whites set but yolk jiggles.

    Spread mashed avocado on each toast slice, top with smoked salmon, then carefully lift poached egg onto the salmon.
