Smoked Pork Loin

Ingredients
- 1.25 lb pork loin
- 1.5 tbsp smoked paprika
- 1 tbsp brown sugar
- 2 tbsp hot sauce (Frank's or similar)
- 2 tbsp butter
- 3 sprigs fresh thyme (or 1 tsp dried)

Pat pork dry with paper towels. Mix smoked paprika, brown sugar, salt, and pepper in a small bowl.

Heat 1 tbsp oil in a 12-inch cast iron or heavy skillet over medium-high until it shimmers.

Rub paprika mixture all over pork. Sear without moving for 3 minutes until deep brown crust forms.

Flip and sear the other side for 3 minutes until browned. Brush hot sauce and melted butter over top.

Transfer skillet to a 425°F oven for 8–10 minutes until the center reads 140°F on a meat thermometer.

Remove from oven. Scatter thyme on top, rest 3 minutes, then slice against the grain and serve hot.
