Ingredients
- 1.5 lb pork shoulder, boneless
- ½ lb sausage (chorizo or Italian)
- 1 medium yellow onion
- 1.5 tsp cumin
- 1 tsp smoked paprika
- 1 whole fresh lime
- ¼ cup cilantro (fresh, chopped)

Cut pork shoulder into 1.5-inch chunks. Slice sausage into 1-inch rounds. Dice onion.

Heat olive oil in a 12-inch skillet over high. Add pork chunks in a single layer without moving for 3 minutes until deep golden.

Stir, then brown for another 2 minutes. Push pork to the side and add sausage and onion, cooking until sausage is browned, ~3 minutes.

Sprinkle cumin and paprika over everything, stir to coat, and cook for 1 minute until fragrant.
