Ingredients
- 1.5 lbs smoked boudin sausage
- 2 whole bell pepper (red or yellow)
- 1 whole yellow onion
- 2 tbsp olive oil
- 1 tsp hot sauce or chili powder

Slice boudin into 1/2-inch-thick rounds. Slice peppers into 1/2-inch strips and dice the onion.

Heat oil in a 12-inch skillet over medium-high heat until shimmering, about 1 minute.

Add boudin slices to the skillet and cook without stirring until the bottom edges brown, 2–3 minutes.

Flip each slice and cook another 2 minutes until edges crisp. Push to the side of the skillet.
