Ingredients

  • 1.5 lbs smoked boudin sausage
  • 2 whole bell pepper (red or yellow)
  • 1 whole yellow onion
  • 2 tbsp olive oil
  • 1 tsp hot sauce or chili powder

Instructions

    Slice boudin into 1/2-inch-thick rounds. Slice peppers into 1/2-inch strips and dice the onion.

    Heat oil in a 12-inch skillet over medium-high heat until shimmering, about 1 minute.

    Add boudin slices to the skillet and cook without stirring until the bottom edges brown, 2–3 minutes.

    Flip each slice and cook another 2 minutes until edges crisp. Push to the side of the skillet.

    Add peppers and onion to the empty skillet space. Cook 4–5 minutes, stirring occasionally, until soft.

    Toss everything together, sprinkle with hot sauce or chili powder, and serve hot.
