Ingredients

  • 2.5 lbs pork rib tips (cut into 2–3 inch pieces)
  • ¾ cup ketchup
  • 3 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • ½ tsp cayenne pepper
  • 1 tsp smoked paprika

Instructions

    Pat rib tips dry with paper towels. Season generously with salt and black pepper on all sides.

    Whisk together ketchup, vinegar, brown sugar, cayenne, and smoked paprika in a bowl until smooth.

    Heat 2 tbsp neutral oil in a large skillet over high heat until it shimmers and barely smokes, ~2 minutes.

    Add rib tips in a single layer — do not stir for 4 minutes. Edges should char black and crisp.

    Flip pieces and char the other side another 3–4 minutes until deep brown and caramelized.
