Ingredients
- 1 lb frozen french fries
- 1 lb (about 4 links) smoked boudin sausage
- ½ cup mayonnaise
- 2 tbsp sriracha or hot sauce
- ½ whole (juiced) lime
- 2 stalks scallions, sliced thin

Spread frozen fries on a sheet pan, bake at 425°F until golden and crispy, about 16 minutes.

While fries bake, whisk mayo, sriracha, and lime juice in a small bowl until smooth.

Heat a large skillet over medium-high heat. Score the boudin casings crosswise every 1 inch.

Sear boudin until deeply browned and charred in spots, turning occasionally, about 8 minutes.

Transfer boudin to a plate. Plate fries alongside, drizzle sauce over the sausage.
