Ingredients

  • 2 chops pork chops (1.5 inches thick, bone-in preferred)
  • 6 oz chorizo
  • 1 tsp Spanish smoked paprika
  • 3 cloves garlic cloves, minced
  • ½ lemon fresh lemon
  • 2 tbsp fresh thyme or parsley (optional)

Instructions

    Pat pork chops dry with paper towels. Season both sides generously with salt, pepper, and paprika.

    Heat olive oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork chops 4 minutes per side without moving. Edges should look golden and opaque; centers still slightly pink.

    Remove chops to a plate. Slice chorizo into 1/4-inch rounds and cook in the same skillet over medium heat for 3 minutes, stirring occasionally.

    Add minced garlic to the chorizo, stir constantly for 30 seconds until fragrant.

    Return pork chops to the skillet. Squeeze fresh lemon juice over everything. Garnish with herbs if using.
