Ingredients
- 1 medium (about 3 cups shredded) green papaya, peeled and shredded
- 1.5 cups red cabbage, thinly sliced
- 1.5 cups green cabbage, thinly sliced
- 6 cloves garlic cloves, thinly sliced
- 1 lime lime (juiced)
- 2 tbsp fish sauce
- 1 chili Thai bird's eye chili, thinly sliced (or red chili flakes to taste)
- ½ cup fresh herbs (cilantro, mint, or Thai basil), roughly chopped

Heat 2 tbsp neutral oil in a small skillet over medium-high. Add sliced garlic and fry until golden and crispy, ~3 minutes. Transfer to paper towels with a pinch of salt.

In a large bowl, combine shredded green papaya, red cabbage, and green cabbage.

Pour lime juice and fish sauce over the vegetables. Add sliced chili. Toss gently with your hands until everything is coated, ~2 minutes.
