Ingredients
- 1 medium green papaya, peeled and seeded
- 1 lime (juiced)
- 2 tbsp fish sauce or soy sauce
- ½ cup roasted peanuts, crushed
- ¼ cup crispy fried shallots
- ½ cup fresh cilantro and mint, chopped

Using a vegetable peeler or julienne tool, shred the papaya into thin matchsticks. Place in a large bowl.

In a small bowl, whisk lime juice, fish sauce, and 1 tbsp water until combined. Taste and adjust.

Pour dressing over papaya, toss gently until coated, about 30 seconds.

Divide salad between two bowls. Top each with crushed peanuts, fried shallots, and fresh herbs.
