Ingredients

  • 1 medium (about 3 cups) green papaya, peeled and shredded
  • 1 whole (juiced) lime
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar or brown sugar
  • 1 whole red Thai chile or jalapeño, sliced thin
  • ¼ cup roasted peanuts, crushed
  • ½ cup mixed fresh mint, cilantro, and Thai basil, chopped

Instructions

    Whisk lime juice, fish sauce, sugar, and sliced chile in a bowl until sugar dissolves.

    Add shredded papaya to the dressing and toss gently until coated and softened, about 2 minutes.
