  • 3 cups cooked rice (day-old or chilled preferred)
  • 6 cloves garlic, thinly sliced
  • 4 tbsp vegetable oil

Instructions

    Heat oil in a 12-inch skillet over medium until it shimmers, about 90 seconds.

    Add sliced garlic and cook, stirring constantly, until edges turn golden brown, ~2 minutes.

    Add the rice, breaking up clumps with a spatula, and toss to coat with oil.

    Continue stirring and pressing the rice flat against the skillet until edges crisp and brown, ~3 minutes.
