Ingredients

  • 2 cups cooked rice
  • 1 cup ham, diced
  • ¾ cup frozen peas
  • 2 whole egg

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high until it shimmers.

    Add rice and ham, breaking up clumps and stirring, until rice is heated through and edges start to crisp, ~3 minutes.

    Stir in frozen peas and cook until tender, ~2 minutes.

    Push rice to the sides of the skillet, add 0.5 tbsp oil to the center, and crack eggs into the space.

    Fry eggs until whites set but yolks still jiggle, ~3 minutes, then gently stir to break yolks and combine.

    Divide between bowls and serve with pickled onions and beets if you have them.
