Ingredients

  • 4 strip bacon strips
  • 2 slice bread (sourdough, brioche, or whole wheat)
  • 1 whole avocado, ripe
  • 2 whole eggs
  • 1 tbsp butter
  • ¼ whole lemon (juiced)

Instructions

    Cook bacon in a skillet over medium heat until crispy, about 5 minutes. Remove and set aside.

    Toast bread until golden and crispy, about 2 minutes per side.

    Return skillet to medium heat. Add butter and crack both eggs into it. Fry until whites set but yolks jiggle, about 3 minutes.

    Halve avocado and scoop into a bowl. Mash with a fork, then season with salt, pepper, and lemon juice.

    Spread smashed avocado on both toast slices. Top each with bacon pieces.
