Ingredients

  • 1 block (300g) silken tofu
  • ½ cup tapioca pearls, cooked
  • ¼ cup brown sugar
  • ¼ cup water
  • 2 slices ginger, fresh (thin slices)
  • ½ tsp vanilla extract

Instructions

  1. 1

Combine brown sugar, water, and ginger in a small pot over medium heat.

  2. 2

Simmer until syrup is glossy and darkened, about 3–4 minutes. Stir in vanilla and remove from heat.

  3. 3

Let syrup cool for 1 minute, then fish out ginger slices.

  4. 4

Gently spoon silken tofu into two bowls, keeping it jiggly — don't break it up.

  5. 5

Top each bowl with cooked tapioca pearls.

  6. 6

Drizzle warm brown sugar syrup over tofu and pearls. Serve immediately.
