Ingredients
- 14 oz soft tofu (silken preferred)
- ¾ cup soy milk (unsweetened or light)
- 2 tbsp granulated sugar
- 1 tsp fresh ginger, grated
Instructions

Crumble soft tofu into a blender with soy milk and 1 tbsp sugar. Blend until completely smooth and cloud-like, ~90 seconds.

Pour pudding into two bowls. Divide evenly and smooth the surface with the back of a spoon.

Stir grated ginger with 1 tbsp sugar and 2 tbsp water until sugar dissolves, ~30 seconds.
