Ingredients
- 12 sheets phyllo pastry sheets
- 200 g feta cheese, crumbled
- ½ cup fresh parsley, finely chopped
- ¼ cup fresh dill, finely chopped
- 4 tbsp butter, melted
- 2 cups olive oil, for frying
- 1 whole egg, beaten
- ½ tsp salt
- ¼ tsp black pepper

Mix feta, parsley, dill, salt, and pepper in a bowl until combined.

Lay one phyllo sheet on a cutting board. Brush lightly with melted butter.

Spread 2 tbsp filling along the bottom edge, leaving a 1-inch border on sides.

Fold sides inward, then roll tightly away from you into a cylinder. Seal seam with beaten egg.

Repeat with remaining phyllo sheets and filling until you have 12 rolls.

Heat oil in a deep skillet or pot over medium-high until a wooden spoon sizzles immediately when dipped.

Carefully slide 3–4 rolls into hot oil. Fry until golden brown on all sides, ~4 minutes total.
