Ingredients

  • 12 sheets phyllo pastry sheets
  • 200 g feta cheese, crumbled
  • ½ cup fresh parsley, finely chopped
  • ¼ cup fresh dill, finely chopped
  • 4 tbsp butter, melted
  • 2 cups olive oil, for frying
  • 1 whole egg, beaten
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Mix feta, parsley, dill, salt, and pepper in a bowl until combined.

    Lay one phyllo sheet on a cutting board. Brush lightly with melted butter.

    Spread 2 tbsp filling along the bottom edge, leaving a 1-inch border on sides.

    Fold sides inward, then roll tightly away from you into a cylinder. Seal seam with beaten egg.

    Repeat with remaining phyllo sheets and filling until you have 12 rolls.

    Heat oil in a deep skillet or pot over medium-high until a wooden spoon sizzles immediately when dipped.

    Carefully slide 3–4 rolls into hot oil. Fry until golden brown on all sides, ~4 minutes total.

    Remove with a slotted spoon and drain on paper towels. Repeat with remaining rolls.

    Serve hot while crispy. Pair with yogurt or a squeeze of fresh lemon if desired.
