Ingredients
- 5 cups fresh spinach, roughly chopped
- ¾ cup feta cheese, crumbled
- 8 sheets phyllo dough sheets
- ¼ medium yellow onion, minced
- 1 tsp dried dill
- ¼ tsp nutmeg, ground
- 4 tbsp olive oil, divided

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add minced onion, cook 1 minute until fragrant.

Add spinach, dill, and nutmeg. Stir continuously for 2–3 minutes until spinach wilts and any liquid evaporates.

Remove pan from heat. Stir in crumbled feta and let cool 2 minutes, then divide filling into 4 portions.

Layer 2 phyllo sheets, brush lightly with olive oil between them. Spread 1 portion filling on one short edge.

Roll tightly into a log, tucking sides in as you go. Repeat with remaining phyllo, oil, and filling for 4 börek.

Wipe skillet clean. Heat 2 tbsp olive oil over medium heat. Pan-fry börek 3–4 minutes per side until deep golden.
