Ingredients

  • 1.5 lb Mangalica pork roast (bone-in or boneless)
  • 1.25 lb potato wedges (1-inch thick)
  • 3 tbsp olive oil
  • 4 whole garlic cloves, minced
  • 1.5 tsp Hungarian paprika
  • 3 sprigs fresh thyme or rosemary

Instructions

    Preheat oven to 425°F. Pat the pork roast dry with paper towels and generously season with salt, pepper, and paprika.

    Toss potato wedges with 2 tbsp olive oil, salt, and pepper on a large sheet pan, then spread in a single layer.

    Rub pork with remaining 1 tbsp oil, garlic, and thyme sprigs. Set on the sheet pan beside the potatoes.

    Roast for 18–22 minutes until the pork reaches 145°F at the thickest point and potatoes are golden and crispy.

    Rest the pork for 5 minutes, then slice and serve alongside the roasted potatoes.
