Ingredients
- 2 steaks (1.5 inches thick, ~12 oz total) pork shoulder steaks or thick-cut pork chops
- 1 lb potatoes, quartered
- 2 medium red bell peppers, cut into chunks
- 1 large red onions, quartered
- ½ cup apple cider (or apple juice)
- 3 sprigs fresh sage or thyme

Heat oven to 450°F. Pat pork steaks dry with paper towels, then score the skin in a crosshatch pattern.

Toss potatoes, peppers, and onions with 2 tbsp oil, salt, and pepper on a large sheet pan.

Push vegetables to the edges, then lay pork steaks skin-side up in the center. Season generously with salt and pepper.
