Ingredients

  • 1.5 lbs pork short ribs (galbi-cut, ~1.5 inches thick)
  • 3 tbsp gochujang (Korean red chili paste)
  • 3 tbsp soy sauce
  • 2 tbsp mirin or honey
  • 1 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 stalks green onion, sliced thin

Instructions

  1. 1

Mix gochujang, soy sauce, mirin, sesame oil, garlic, and ginger in a bowl until smooth.

  2. 2

Pat pork ribs dry. Coat both sides generously with the marinade, pressing it into the meat.

  3. 3

Arrange ribs on a sheet pan lined with foil, marinade side up. Let sit 5 minutes.

  4. 4

Broil 6 inches from the heat for 10–12 minutes until edges caramelize and meat is cooked through.

  5. 5

Flip ribs, broil another 5–6 minutes until the second side is glazed and sticky.

  6. 6

Scatter green onion on top. Serve hot with rice or lettuce wraps.
