Ingredients

  • 1.5 lbs pork shoulder or butt, thinly sliced
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 4 cloves garlic, minced
  • 4 stalks scallions, sliced (white and green parts separated)

Instructions

    Mix gochujang, soy sauce, brown sugar, sesame oil, and minced garlic in a small bowl until smooth.

    Heat a large skillet over medium-high heat. Add pork in a single layer and sear 2 minutes without stirring.

    Stir the pork, breaking apart clumps. Cook 2 more minutes until mostly cooked through.

    Pour the gochujang sauce over the pork. Stir constantly until the meat caramelizes and sauce thickens, ~3 minutes.

    Fold in the white scallion parts. Taste and adjust salt or sugar if needed.

    Transfer to a plate. Top with green scallion slices. Serve hot over rice or in lettuce wraps.
