Ingredients
- 1.5 lbs pork shoulder or butt, thinly sliced
- 3 tbsp gochujang (Korean red chili paste)
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp sesame oil
- 4 cloves garlic, minced
- 4 stalks scallions, sliced (white and green parts separated)

Mix gochujang, soy sauce, brown sugar, sesame oil, and minced garlic in a small bowl until smooth.

Heat a large skillet over medium-high heat. Add pork in a single layer and sear 2 minutes without stirring.

Stir the pork, breaking apart clumps. Cook 2 more minutes until mostly cooked through.

Pour the gochujang sauce over the pork. Stir constantly until the meat caramelizes and sauce thickens, ~3 minutes.

Fold in the white scallion parts. Taste and adjust salt or sugar if needed.
