Ingredients
- 1 lb ground beef
- ¼ cup red onion, minced
- ¼ cup fresh parsley, chopped
- 1.5 tsp cumin, paprika, and black pepper, mixed
- 2 whole red bell peppers, halved lengthwise
- 1.5 cups cooked rice pilaf
- 2 pieces flatbread, warmed

Mix ground beef, minced onion, parsley, and spice blend with 0.5 tsp salt. Divide into 4 portions and mold firmly onto metal skewers.

Heat grill or grill pan to medium-high. Lightly oil the grates. Arrange skewers and pepper halves on the hot surface.

Grill kofta 6–7 minutes, rotating once or twice, until cooked through and charred at edges. Peppers should blister, 5–6 minutes.

Thinly slice half a raw red onion and toss with 0.5 tsp sumac and a pinch of salt. Let sit 2 minutes; this is your sumac onions.

Warm rice pilaf and flatbread while kofta finishes cooking.

Plate rice, flatbread, kofta, and grilled pepper. Top with sumac onions and a pinch of extra sumac. Serve immediately.
