Ingredients
- 1 can (14 oz) canned crushed tomatoes
- ½ medium red onion, diced
- 4 large eggs
- 4 slices crusty bread (baguette or ciabatta), sliced
- 3 tbsp pesto (jarred or fresh)
- ¼ cup feta cheese, crumbled
- 1 tsp cumin and paprika (spice blend)

Heat oil in a 10-inch skillet over medium. Add diced red onion and cook, stirring, until softened, about 3 minutes.

Pour in crushed tomatoes. Add cumin and paprika, stir, and simmer 4 minutes until slightly thickened.

Make 4 small wells in the sauce. Crack an egg into each well. Cover and bake in a 375°F oven until whites set but yolks jiggle, 6–8 minutes.
