Ingredients

  • 1 can (14 oz) canned crushed tomatoes
  • ½ medium red onion, diced
  • 4 large eggs
  • 4 slices crusty bread (baguette or ciabatta), sliced
  • 3 tbsp pesto (jarred or fresh)
  • ¼ cup feta cheese, crumbled
  • 1 tsp cumin and paprika (spice blend)

Instructions

    Heat oil in a 10-inch skillet over medium. Add diced red onion and cook, stirring, until softened, about 3 minutes.

    Pour in crushed tomatoes. Add cumin and paprika, stir, and simmer 4 minutes until slightly thickened.

    Make 4 small wells in the sauce. Crack an egg into each well. Cover and bake in a 375°F oven until whites set but yolks jiggle, 6–8 minutes.

    While eggs bake, spread pesto on bread slices and broil until golden, 2–3 minutes.

    Top shakshuka with crumbled feta. Serve hot with pesto garlic bread on the side.
