Ingredients

  • 6 whole large eggs
  • ¾ cup sharp cheddar cheese, shredded
  • 1.5 cups fresh spinach, roughly chopped
  • ½ medium yellow onion
  • 2 tbsp fresh herbs (parsley, dill, or chives), chopped
  • 2 tbsp butter
  • salt and black pepper to taste

Instructions

    Dice the onion into 1/4-inch pieces. Chop spinach and herbs.

    Crack eggs into a bowl, add salt and pepper, and whisk until no white streaks remain.

    Heat butter in a 10-inch nonstick skillet over medium until foaming, ~60 seconds.

    Add diced onion and sauté until soft and translucent, about 3 minutes.

    Add spinach and stir until wilted, about 1 minute. Spread into an even layer.

    Pour whisked eggs over vegetables and sprinkle cheese evenly on top. Do not stir.

    Cook over medium-low until edges are set but center still jiggles slightly, 7–9 minutes.

    Slide onto a serving plate or cut into wedges directly in the skillet.

    Scatter fresh herbs over the top. Serve warm or at room temperature.
