Ingredients
- 6 whole large eggs
- ¾ cup sharp cheddar cheese, shredded
- 1.5 cups fresh spinach, roughly chopped
- ½ medium yellow onion
- 2 tbsp fresh herbs (parsley, dill, or chives), chopped
- 2 tbsp butter
- salt and black pepper to taste

Dice the onion into 1/4-inch pieces. Chop spinach and herbs.

Crack eggs into a bowl, add salt and pepper, and whisk until no white streaks remain.

Heat butter in a 10-inch nonstick skillet over medium until foaming, ~60 seconds.

Add diced onion and sauté until soft and translucent, about 3 minutes.

Add spinach and stir until wilted, about 1 minute. Spread into an even layer.

Pour whisked eggs over vegetables and sprinkle cheese evenly on top. Do not stir.
